Strawberry basil quinoa salad with champagne vinaigrette recipe

 

This salad is full of fresh spring flavours.

Sweet strawberries, basil and avocado are tossed with cooked quinoa and topped with fresh feta cheese and pine nuts.

The champagne vinaigrette adds a light fruity touch to the already simple yet elegant salad.

This is a must-make for any spring gathering or even as a light meal.

Serves 4

Ingredients:

For the champagne vinaigrette

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup champagne vinegar (you can substitute balsamic, apple cider or even red wine vinegar)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Pinch of salt and pepper to taste

For the salad

  • 1 cup quinoa, cooked
  • 1 cup fresh strawberries, sliced
  • 1/2 cup crumbled feta cheese (goat cheese is a good substitute)
  • 4 cups fresh baby spinach, finely chopped (you can also use rocket)
  • 1 small bunch fresh basil, very thinly sliced
  • 1 small avocado, diced
  • Pine nuts or sesame seeds for garnish (optional)

Directions:

  1. In a blender, add all of the ingredients for the vinaigrette. Blend until thick and creamy and set aside.
  2. In a large bowl add the quinoa, strawberries, 1/4 cup of the feta cheese, spinach, basil and avocado. Add in 1/4 cup of the vinaigrette and toss well to combine.
  3. Divide the salad between serving bowls. Top with remaining 1/4 cup of feta cheese, pine nuts and extra vinaigrette before serving.

Slim like an Egyptian: Can tying a simple cord around your waist like the ancients help you lose weight for summer?

 

We are trialling the Malory band as featured in the newspaper.  Follow us on our journey to read all about it.  This blog will be updated with our findings…

Day One:

The Malory turned up today 8th May (two weeks) and was instantly worn.  There are two things to consider here namely being in control of one’s eating and the exterior gastric band sense of control.  Having ordered the item in the correct size, it fits perfectly, and is quite comfortable, however, the wearer is aware of its presence which automatically serves as a reminder to prevent overeating.  There is also the ‘comfort’ factor that having this in place means that one can go about the daily routine without worrying about what and when to eat, it would appear that as hunger creeps in, the band feels less snug and more comfortable across the waistline… keep watching we shall keep this blog rolling.

Day Seven:

The Band is an excellent ‘reminder’ and has been doing a brilliant job of portion control. There is a definite difference today… One tip/hint is that it should not be worn when flying, particularly if you tend to bloat it would be incredibly uncomfortable and probably dangerous.  We have also noticed, that when eating less healthily the band tightens considerably more quickly.

Day Fourteen:

The Band is working remarkably well, and it has to be said, that even two weeks in there is a discernible difference.  Surprisingly, we find that it has served to correct posture, you know … shoulders back, upright, core held in – so this is an unexpected and delightful addition, we feel strong enough that it can be removed now during the day on/off intermittently whilst continuing to eat and behave sensibly.  Keep watching (will it all end in disaster or hugely succesfully?)

Day Twenty Eight:

The Band has worked well, and it was scary having to remove it and rely on judgement! however, it has done its job and fullfilled its purpose, a newer more sensible approach to healthy eating has been learned and still the posture is maintained, sitting up straight and holding in the stomach and breathing correctly.  The band will be kept for occasional use or to get back on track if we fall off the wagon.

Contrary to what we know … exfoliating for summer

Once you have applied the false lash strips finish off with a thin line inside the eyelid on the top (and bottom if you prefer) so that the lashes ‘blend’ seemingly with your own.

Puffy eyes…a guide how not to

A jargon free easy how to methodology on combatting puffy eyes and bags and all things related…

To actually reduce and work on the problems of eye bags and puffiness we would recommend a healthy nutritious diet with plenty of water, decaf hot drinks (they taste the same) and sleep!

Avoid using greasy, fatty skincare products around the delicate eye area, for once they are absorbed, they collect and store under the eye area (and around it too), and have to be removed surgically.

Products that can be applied topically that are then dissipated work well around the eye area, commonly used are; cold compress of cucumber, ice cubes wrapped in a towel, cooled used teabags or paper masks, eye patches will reduce the swelling in the area and restore circulation and drainage from the site.  We recommend Diamond Blend gel eye patch which work best after 20 mins but can be used as quickly as 5 mins. www.diamondblend.com

To conceal puffy eyes we recommend the following;
